Stir Fried Udon with Curry and Assorted Mushrooms

Ingredients

Enoki mushrooms / golden mushrooms100 g
Oyster mushrooms80 g
Fresh mushrooms3
Udon (cooked)1 packet
White beancurd pressed1/2 no.
Curry powder1 tbsp
Ginger, grated2 tsp
Oil2 tsp

Seasonings

Water1 tbsp
Salt1 tsp
Sugar1/2 tsp

Method

1Wash all mushrooms.
2Blanch fresh mushrooms and oyster mushrooms. Drain. Cut white beancurd pressed into strips.
3Heat wok. Add oil and saut? ginger. Use low heat and add curry powder. Mix well.
4Add all mushrooms, udon and seasonings. Mix well and serve.
